There’s nothing simpler than a meal made with just one star ingredient. These Asian fried eggs are proof that simple can be absolutely delicious.
They’re cheap, quick and packed with flavour. All you need is six eggs, your favourite crispy chilli sauce, ginger and shallots, and a splash of light soy sauce.
Start by getting a wok nice and hot. Add about 1/3 cup of canola oil and heat it to around 180°C. Carefully crack an egg into the hot oil, keeping it whole. Let it fry until the edges are beautifully crispy while the yolk is still soft and runny. Remove and repeat with as many eggs as you’d like.

To serve, simply place the crispy eggs on a plate, spoon over your favourite crispy chilli sauce, add a generous helping of ginger and shallots, and finish with a splash of light soy sauce. Serve immediately and enjoy!
